Battle Of The UT Macaroni Salad. Best Macaroni Salad Recipe
BBQ's are going to be in full swing this 4th of July and one of the best side dishes to bring to the potluck is a macaroni salad. It is easy to make and if you cook regularly, then you are going to have most of the stuff on hand.
Apparently there is a macaroni salad so good it is called The World's BEST Macaroni Salad. Can it take on our local southern Utah Island Grinds macaroni salad????? I love a good macaroni salad. The ones at my family reunions usually have either peas or celery and shredded carrots along with the usual onion and mayo. I tend to go for the macaroni salads that have no raw onion and I prefer peas over celery. I would like to say that Miracle Whip or sweet salad dressing have NO business being in macaroni salad. Like, ever. In fact I don't know where Miracle Whip belongs....that is an argument for another time.
The best macaroni salad I have had at a restaurant is at Island Grinds. In St. George, Utah, they rival all of the other restaurants. I was excited to see that when I go up north (In Utah) I can grab some delicious Hawaiian food, in my hometown, at their West Valley City location. If you are already up north, Island Grinds macaroni salad also rivals Mo Bettah's and Aunty's Hawaiian Kitchen. It's. That. Good.
If you would like to tackle the challenge of making some delicious macaroni salad for your next BBQ, here is the recipe that is touted as The World's Best Macaroni Salad:
8 oz uncooked macaroni noodles
Salt
1 to 1½ cups mayonnaise divided use
¼ cup grated onion
3 tbsp rice vinegar see notes on substitutions
½ cup celery finely chopped
½ cup carrot peeled and grated
ground black pepper

I would swap the celery for peas and put onion powder instead of shredded onion. Also, I had no idea that I needed rice vinegar. I've never used it but I can try it on a small batch. Let me know if there is something missing that I need to try in my mac salad!

Riggatti's in St. George, Utah came in 1st for its wood fired pizza! 974 W Sunset Boulevard,St. George, UT 84770. Some listeners said this is the best pizza they have every tasted. WOW!
There is a location in St. George and Washington, Utah. Riggatti's does specialty pizzas battles of the month and the reigning champ stays on the menu until the next contender out sells the reigning champ. So, there is always something new to try.
Mainly Pizza in Leeds Utah came in 2nd place with some great reviews. I didn't really know where it was but it is close to the freeway in a little strip of businesses @545 N Main St unit 6, Leeds, UT 84746. Mainly Pizza serves appetizers, specialty pizza, pasta and flatbreads.
3rd place is Mountain Mike's in Hurricane, Utah. It is a new pizza place and is already getting rave reviews. The info our listeners gave was that it is a little pricey but the pizza is so big that there is plenty of leftovers for the next meal. I also hear the garlic knots are the bomb!
Coming in 4th is Costco Pizza in St George, Utah. You really can't beat a large pizza for $10 or a slice and drink for $1.99. You get a huge pizza that is foldable and delicious. It is also very fresh, made right in front of your eyes, if you are waiting in line.
5th place is Slice House in St George, Utah. This is fairly new in town. It offers pizza, pasta, subs, and more! They tout that their pizzas are made with the freshest ingredients. They also take catering orders.
And in 6th place is Slice of Veyo. I honestly didn't know this place existed. We got a bunch of votes for their pizza, so other's obviously know about it. The menu is pretty vast from salads and pizza to paninis and hotdogs. You can check out the menu and order online.
