Easy Ramen Recipe

Ingredients-

For the broth:

  • 4 cups chicken or vegetable broth

  • 1 teaspoon sesame oil

  • 4-6 cloves garlic, minced

  • 1 teaspoon freshly grated ginger

  • Fresh or dried parsley and cilantro to taste.
  • Optional: a pinch of red pepper flakes or chili oil for heat

For the noodles and base:

  • 2 packs ramen rice noodles

  • 2 boiled eggs

  • Toppings of your choice:

    • Sliced green onions

    • Cabbage, bok choy, or kale

    • Shredded/ grilled/crispy chicken, tofu, or pork

    • Corn and bamboo shoots

Instructions:

  1. Make the broth:
    In a medium pot, heat sesame oil over medium heat. Add garlic and ginger, sauté until fragrant (about 1 minute). Stir in broth. Bring to a simmer and let cook for a few minutes to let the flavors combine.

  2. Cook the noodles:
    In a separate pot, cook ramen rice noodles according to package directions. Drain and set aside.

  3. Prep your toppings:
    While the broth simmers, prepare your toppings. Steam greens, or shred leftover meat. Boil eggs if using (boil for 12 minutes, then place in ice water and peel).

  4. Assemble the bowls:
    Divide noodles into bowls. Ladle hot broth over them, then top with your chosen extras. Finish with a drizzle of chili oil or sesame seeds if desired.

To keep it simple, use what you have in the fridge. Sometimes I add carrots,celery and broccoli. Other times I use squash, mushrooms and fresh herbs. play around and have fun with it. Enjoy!
