Easy Ramen Recipe
Ingredients-
For the broth:
4 cups chicken or vegetable broth
1 teaspoon sesame oil
4-6 cloves garlic, minced
1 teaspoon freshly grated ginger
- Fresh or dried parsley and cilantro to taste.
Optional: a pinch of red pepper flakes or chili oil for heat
For the noodles and base:
2 packs ramen rice noodles
2 boiled eggs
Toppings of your choice:
Sliced green onions
Cabbage, bok choy, or kale
Shredded/ grilled/crispy chicken, tofu, or pork
Corn and bamboo shoots

Instructions:
Make the broth:
In a medium pot, heat sesame oil over medium heat. Add garlic and ginger, sauté until fragrant (about 1 minute). Stir in broth. Bring to a simmer and let cook for a few minutes to let the flavors combine.Cook the noodles:
In a separate pot, cook ramen rice noodles according to package directions. Drain and set aside.Prep your toppings:
While the broth simmers, prepare your toppings. Steam greens, or shred leftover meat. Boil eggs if using (boil for 12 minutes, then place in ice water and peel).Assemble the bowls:
Divide noodles into bowls. Ladle hot broth over them, then top with your chosen extras. Finish with a drizzle of chili oil or sesame seeds if desired.
To keep it simple, use what you have in the fridge. Sometimes I add carrots,celery and broccoli. Other times I use squash, mushrooms and fresh herbs. play around and have fun with it. Enjoy!
