I feel a sense of accomplishment when I can take leftovers and turn them into a whole new meal that no one complains about. Eating leftovers can only happen once for most dishes at my house, so I learned to reuse the leftover dish in a new way. Crock-Pot meals are great for when you don't have a lot of time to cook, or if you don't want to heat up your house with the oven.

When we have a big meal, I usually freeze some of the extra meat immediately so that it doesn't go bad while I am thinking about what I can use it for.

This recipe is for any leftover beef, pork, turkey or chicken. It would be amazing with any of it. When we have a big meal, I usually freeze some of the extra meat immediately so that it doesn't go bad while I am thinking about what I can use it for.

This is perfect for all of the leftover turkey at Thanksgiving time too! Plus you can pull it right out of the freezer and throw it in the Crock-Pot. All you need to do is start thinking about different spices that you didn't necessarily use the first time you used the meat.

Then you add in the other ingredients to fill out the meal. Then top it with amazing fresh options and give plenty of options and suddenly everyone is happy.

Crock-Pot Taco Soup

Ingredients:
2 cups of meat of choice
5 cans of drained beans- I like to mix it up but I always make sure there are at least 2 cans of pinto beans in the mix
2 cans of corn
1 cup of salsa
2 cups of water
4 tablespoons of tomato paste
2 tablespoons of garlic powder
2 teaspoons of onion powder
Salt and pepper to taste (It's more than you think.)
Top with:
Fresh onion, tomato, jalapeno, radish, avocado, cilantro, lime, sour cream, shredded cheese and chives and serve with Fritos Scoops!

Instructions:
This is the easy part! I use powdered onions and garlic so I can throw this together fast and leave for the day.
Throw everything in the Crock-Pot and cook on low for 6 hours or on high for 3 hours. Then chop and put out all of your toppings so everyone can make their own bowl of goodness, and serve with Fritos Scoops.
*Remember, this is YOUR meal. Add whatever you like! If you want more meat, add it. If you like something different to top it with, use it! You can also very easily make this vegan, so if that's your thing, do it.
