Thanksgiving in Utah blends traditional American side dishes with some rather unique regional twists. Before we get to the strange side dishes I've heard of, here are a couple of the most popular Thanksgiving side dishes you'll likely encounter in the Beehive State:

  1. Jell-O Salad
A Utah favorite, this iconic side dish often features Jell-O mixed with ingredients like marshmallows, fruit cocktail, or cottage cheese. It's a quirky, sweet dish that's become a Thanksgiving staple in many Utah households. (I've never actually seen a green Jell-O Salad myself but supposedly it's what we are known for.)
  2. Funeral Potatoes
Also known as cheesy hash brown casserole, this dish is a Utah classic often served during Thanksgiving and other gatherings. It's made with hash browns, cheese, sour cream, butter, and sometimes topped with a crunchy breadcrumb or cornflake crust.

Now for the strange side dishes that some Utahns add to their Thanksgiving tables:

1. Asparagus Casserole or Kidney Bean Salad? Kelly and Keria think these are great additions to dinner. I'll have to take their word for it.

2. Noodle soup over mashed potatoes? I think this would make the mashed potatoes too runny for me but I have never tried it. I think the flavor would be good though.

3. Cabbage and BACON! I have no problem with dishes that include bacon. ;)

4. Shrimp Cocktail layered dip- I think my mom has actually made this before, but I avoid crustaceans.

5. Vegall??? Peas, lima-beans, Brussel sprouts, carrots and corn? When Misty describes it as smelling SO BAD, it doesn't make me even wanna try.

6. Pistachio Pudding Salad.... Not sure what all goes in this dish but it sounds interesting. Several commenters on our Facebook post said it was gross, but I actually like pistachio ice cream, so who knows.

What every you are doing for Thanksgiving and whatever you are eating, I hope you have a wonderful time with friends and family. Enjoy your time together. Count your blessings and make sure you share them.
