Summer Crockpot Lemon Herb Chicken
Ingredients
4 boneless, skinless chicken breasts
1 cup chicken broth
2 lemons (1 sliced, 1 juiced)
5 cloves garlic, minced
2 tbsp olive oil
1 tsp dried and crushed oregano
1 tsp dried and crushed thyme
Salt & pepper to taste
Fresh parsley for garnish
Instructions
Place chicken breasts in the crockpot.
In a small bowl, whisk together chicken broth, lemon juice, garlic, olive oil, oregano, thyme, salt, and pepper.
Pour the mixture over the chicken, then layer lemon slices on top.
Cover and cook on low for 4–5 hours or high for 2–3 hours until chicken is tender. I always recommend low for juicier meat.
Garnish with fresh parsley before serving.
