The Recipe: Lemon Berry Tea Cake
Ingredients:
- 1 �� cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 3 tsp lemon zest
- 2.5 tbsp fresh lemon juice
- ½ cup sour cream (or Greek yogurt)
- 1 cup fresh berries (blueberries, raspberries, or chopped strawberries)
- Powdered sugar for dusting
Not So Optional Glaze:
- ½ cup powdered sugar
- 1 tbsp lemon juice
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a loaf pan or 8-inch round pan.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs, lemon zest, and juice.
- Add dry mixture in two parts, alternating with sour cream. Mix until just combined.
- Gently fold in berries.
- Bake for 40–45 minutes until golden and a toothpick comes out clean.
- Cool before dusting with powdered sugar or drizzling glaze.
