Utah’s BEST Loaded Baked Potato Soup Recipe
Fall is almost here and I am totally ready for soup and sweater weather. I love LOVE soup. Loaded Baked Potato Soup is one of the most delicious soups to make. It significantly "levels up" a regular potato soup. There is something so sad about a potato soup that has more flour than butter or cream, and very little flavor. Plus you have to put all the toppings on it to make it amazing.
For this soup I usually use leftover baked potatoes, just to get them used up. But you can for sure boil some up for this recipe. Potato soup is such a comfort food and you definitely want this recipe on hand for the cooler days that are headed our way.
Loaded Baked Potato Soup Ingredients:
- 3 strips of bacon cooked to crispy and crumbled
- 2 Tablespoons salted butter
- 2 Tablespoons of olive oil
- medium yellow onion chopped
- 5 large garlic cloves minced (or just measure with your heart)
- 2 large carrots
- 2 ribs of celery
- 4 large baked potatoes
- 3 cups chicken broth
- 1 cup of water
- 1/2 cup heavy cream
- 1 cup shredded Colby Jack cheese
- 1/2 cup sour cream
- Shredded cheddar cheese, chives, and additional sour cream and the crumbled bacon for toppings
Instructions
- Crisp up the bacon and set aside to cool
- Add the butter and oil to the bacon fat. (fats in moderation, are good for you and add all the flavor)
- Chop the onion and cook in the butter, oil and fat, over medium heat until onions are soft and browning
- Add garlic and cook until fragrant (this happens really fast so be ready to add the liquid).
- Add chopped carrots and celery to the pot along with chicken broth and heavy cream and cook on medium-high heat until the veggies are fork tender. (about 10 min)
- Reduce heat to simmer and add 3 diced baked potatoes.
- Add one diced baked potato and 1 cup of water to a blender and blend until smooth
- Return the puree to the pot and add the shredded Colby-Jack cheese, sour cream and stir well.
- Allow soup to simmer for 15 minutes before serving.
- Top with more sour cream, bacon crumbles, cheddar cheese, and chives.
Serves 4-5 people
It's delicious and my kids love it. Super flavorful.
