Recipe: Amazing Irish Mashed Potatoes For St. Patrick’s Day
I am built to survive. I am part Irish and apparently my body has decided that it will survive the next famine.
Potatoes are the absolute best thing I can eat, and a mashed potato can hide any veggie and still taste good. This is a great way to get your kids to eat some more nutrient dense veggies without batting an eye.
Be careful mom's, your kids will know something is up if you act suspicious so just play the part like nothing is weird or different and if they whine, tell them they MUST try everything on their plate or they do not get dessert. Hey, sometimes it works. hahahah
I tried a new recipe last year for my St Patrick's Day dinner called Colcannon. It is an Irish dish that mixes mashed potatoes and kale or cabbage. The Irish LOVE their potatoes and cabbage.
Every year on St Patrick's Day, we eat corned beef and cabbage that has stewed all day and made the whole house smell amazing. Oh it's heaven. I'll write that recipe up later.
For now we will conquer the delicious Colcannon Recipe.
Ingredients:
4 large or 6 medium russet potatoes
5 tablespoons of real butter
1 cup of milk, cream or butter milk
1 cup of greens (Kale, cabbage, swiss chard or collard greens.)
1/4 cup of parsley (reserve some for garnish)
1/4 cup of chives (reserve a few for garnish)
Salt and pepper to taste.
Instructions:
Cube and boil potatoes until you can easily stab a fork through. (about 15 mins)
Finely chop all greens and add to the hot water and potatoes for 3-5 more minutes.
Drain potatoes and greens and quickly add butter so that it melts into the mixture while mashing. (If you can save that water until cool, it is a great indoor/outdoor plant supplement.)
Add milk or cream and mash until smooth and creamy.
Add salt and pepper to taste.
Put into a serving dish.
Add the greens you reserved to garnish.
Enjoy!
